If you’ve read through some of my posts, you probably have picked up on a few things about me. One, I’m hilarious. And two…I have a slight infatuation with breakfast. There’s something so comforting about making breakfast on a cold weekend morning. It’s like having a blank canvas for the start of your day, but most importantly–what’s more exciting than waking up and realizing that it’s time to eat again? I love stepping back into my kitchen with a clean counter-top and an empty cutting board and the smell of dark French Roast coffee drifting through the air. As for what’s usually on the menu–well I just can’t seem to get enough of frittatas. They’re healthy, they’re filling, they’re extremely photogenic, and they can be made with just about anything. Since I already walked you through the simple technique of making a frittata here, this post today is just for the eyes.
So grab a big mug of coffee and take a scroll through a Saturday in the life of Fanny.
Don’t forget the fruit salad.
Roasted Baby Heirloom Tomato Frittata with Garlic Spinach, Goat Cheese, Apple Chicken Sausage and Scallions
I predict that someday there will be a restaurant called Fanny’s Frittatas. Mom and I will be the first in line.
