Pancetta, Caramelized Fennel, and Goat Cheese Crostini
Serves 15-20
1 Baguette, sliced into 1/4 inch thick pieces
1 tablespoon Olive Oil plus 1 more tablespoon for the fennel
Salt and Pepper
1 fennel bulb, washed and thinly sliced
8-10 thin slices Pancetta, diced
2 4 oz. logs Goat Cheese, softened
Optional Garnish: Honey and Fresh Herbs
Preheat oven to 350. Drizzle baguette slices with 1 tablespoon olive oil and season them with salt and pepper. Bake for 15-20 minutes until toasted and light golden brown, flipping over each slice halfway through.
Preheat oven to 400. Toss sliced fennel with 1 tablespoon olive oil and season with salt and pepper. Bake for 20 minutes or until fennel is lightly golden and caramelized. In a sauté pan over medium heat, cook pancetta until crisp. It should resemble cooked bacon. Spread crostini with softened goat cheese and top with caramelized fennel and crispy pancetta. Drizzle with honey and top with bright, fresh green herbs like basil or parsley.
